They are incredibly easy to make and solely use your pantry staples so you'll always have all the ingredients on hand. They'll quickly become your go-to best muesli butter cookie recipe!
MUESLI BUTTER COOKIES
INGREDIENTS
- 1 1/2 cup plain flour
- 1/2 cup unsalted butter (room temperature)
- 1 cup Muesli Butter
- 1/2 cup brown sugar (lightly packed)
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 egg large (room temperature)
- 3/4 tsp baking powder
- 1/4 sea salt
INSTRUCTIONS
- Preheat over to 175°C
- Sift flour and baking powder and stir to combine.
- Cream butter and sugars using a hand mixer (or stand mixer), until soft and creamy. At this stage, add the sea salt.
- Add Muesli Butter and mix until combined.
- Mix in egg and vanilla extract then add flour mixture and beat until just combined.
- Scoop out the dough and roll into 2.5cm balls,
- Roll dough into one inch balls and place on baking sheet lined with parchment paper.
- Flatten cookies into disks and with a fork, press down on each ball of dough to create a criss-cross pattern and slightly flatten it more
- Bake cookies for about 10 minutes.
- Allow cookies to cool completely on baking sheet before transferring to a wire cooling rack.
NOTES
- Muesli Butter cookies will be very soft just out of the oven so let them rest for a while on the baking sheet. They will firm up well once cooled.
- Store these muesli butter cookies in an airtight container for up to a week.
